● 450 gm of washed and chopped purslane ● 1/4 tbsp of salt ● 1/4 of Onion cut into brunoise ● Finely chopped garlic to taste ● 5 tablespoons of flour ● 1/2 tz of grated Manchego cheese or similar ● 2 eggs ● Olive oil ● For the broth ● 2 tomato ● a piece of onion ● 1 small garlic ● Pinch of oregano ● 3 old spice
M E T H O D
1. In a frying pan add a little olive oil and the onion and garlic to cook off. 2. Add the purslane and keep cooking. 3. Cool down mixture 4. Blend the tomatoes, garlic and onion for the tomato broth and season, bring it over low heat and add the oregano and old spice until the tomato is well cooked. 5. Mix the cooked purslane with the flour and cheese. 6. Add the egg to the flour and purslane mix and fold until even. 7. Heat up a pan with oil on medium heat and form the pancakes while it heats up. 8. Fry gently and flip when golden brown. 9. Serve them and pour the sauce on top. You can complement it with rice or salad on the side.
